What is freeze-dried candy?

Freeze-drying removes moisture from gummy sweets at low temperature, transforming their texture completely — what was soft and chewy becomes light, airy and intensely crunchy. The flavour is also concentrated through the process, making freeze-dried candy taste more vivid than the original. Bebeto's freeze-dried watermelon is one of the most satisfying examples of the format.
